Mediterranean Baked Sole

  • 1 1/2 lbs. sole fillets
  • 2 large tomatoes, chopped
  • 2 Tbsp. grated parmesan cheese
  • 4 Tbsp. butter
  • lemon wedges
  • sea salt to taste

Preheat the oven to 375°. Melt 3 tablespoons butter in a skillet. Add the chopped tomatoes and the Mediterranean Seasoning and sauté for 30 seconds. Remove from heat and stir in the grated parmesan. Lay the fish on a buttered 9x12 inch baking dish or pan. Coat half of each fillet with the tomato mixture and fold the other half over on top of the half that has been coated. Dot the folded fillets with the remaining butter. Bake for 15 minutes. Garnish with lemon wedges and salt to taste.
