"I've always been a huge fan of the flavor potential when sweet and savory ingredients are in balance," says Taylor. She adds, "It is very trendy right now to use sweet and savory together in unexpected combinations for main courses as well as desserts." The darker Korintje cinnamon in this rub from Sumatra, Indonesia is more pungent and aromatic than Chinese cinnamon. It is blended with chipotle and ancho peppers for depth of flavor and heat.
