The easiest way to make perfect hollandaise is to use a blender. This is the same French recipe, without a double boiler. The result is a creamy, lemony sauce with a spicy kick. For more lemon, add in Zesty Lemon Herb seasonnig instead of my spicy New Orleans blend. Both recipes make perfect pairings for asparagus and eggs benedict. 


3 egg yolks
1/4 teaspoon Dijon mustard
1 tablespoon lemon juice
1/2 teaspoon kosher salt
1/2 cup unsalted butter, melted and hot

1. Add the egg yolks, mustard, lemon juice, salt and New Orleans seasoning in the blender. Cover and blend in high for 3-4 minutes.
2. With the blender running, stream in the hot butter. The sauce will thicken immediately. Serve warm.
