Cacio e Pepper Corn with Chefs Grind Pepper

Everyone loves cacio e pepper (cheese and pepper pasta). So it is only fitting to swap out the pasta for summer corn. This dish offers nuttiness of parmesan with salty pecorino, firery ground pepper and sweet corn - this dish is simlply outstanding. Recipe adappted from NYT.


4 ears of corn, corn removed from the cob
4 tablespoons unsalted butter, room temperature, divided
1/4 cup parmesan cheese, grated
1/4 cup pecorino cheese, grated

1. In a bowl, mix together 3 tablespoons butter, half the each the Parmesan, Pecorino, and Chef's Grind Pepper. Set aside.
2. In a large sauté pan over medium-high heat, add the remaining tablespoon of butter. Once melted add the corn and cook for 5-7 minutes or until tender. Turn off the heat and stir in the cheese pepper mixture.
3. Transfer to serving bowl and sprinkle with the remaining cheeses and Chef's Grind Pepper. Serve warm.

To serve on the cob - shuck and cook as desired. Slather on the cheese pepper mixture direclty onto the cobs.
