Cucumber Lime Cooler with Jalapeno Pepper Flakes

 Just maybe the perfect drink for a hot summer day, sunday brunch or anytime a refreshing and spicy mocktail is in order. 


24 ounces coconut water
1 hot house cucumber, sliced into 1/4 inch slices, divided
4 ounces lime juice + wedges for garnish
1 large handful mint + additional leaves for garnish

1. In a large pitcher combine coconut water, 3/4 of the cucumber slices and Jalapeno Pepper Flakes. Refrigerate for 2-4 hours. The longer this mixture steeps, the spicier it will be.
2. In a shaker half filled with ice add mint and lime juice. Shake vigorously for 1 minute. Stir into the pitcher.
2. Strain the mixture and return to pitcher. Pour mixture into 4 glasses filled with ice. Garnish with a lime wedge, cucumber slice and fresh mint.

What can be used instead of coconut water? I am allergic to coconut and my husband does care for the taste.

There is a bunch of interesting new water concepts on the market that would likely work well. There is watermelon water, maple water and also Aloe Vera water that would probably fit in well. You could also squeeze fresh lime, grapefruit or orange juice and dilute that with water to taste.
