This is such a delicious and quick alternative to the traditional recipe. This lasagna cooks in just 50 minutes and there is only one dirty pan involved. Spiced up with my Pizza Seasoning this is a perfect easy weeknight meal.
2 tablespoons olive oil
1 pound ground beef
½ pound ground pork
3 tablespoons Victoria Taylor’s Pizza Seasoning
1 medium onion, chopped
3 cloves garlic, minced
1 teaspoon salt
2 28oz cans of crushed tomatoes
10 regular lasagna noodles, uncooked
¾ cup whole milk ricotta cheese
½ cup grated mozzarella cheese
½ cup grated parmesan cheese
Heat olive oil in a large skillet with a lid at medium high heat. Add onion and sauté for 3 minutes. Stir in ground beef, pork and the Pizza Seasoning. Cook until no longer pink.
Break up the noodles and place on top of the cooked seasoned meat. Pour tomatoes on top and bring to a vigorous simmer. Put the lid on and stir often. Cook for 25 minutes or until the pasta is tender.
Remove from heat. Stir in half of the mozzarella and parmesan cheese. Dot the top with the ricotta and then sprinkle the last of the grated cheeses on top. Cover and let rest as the cheese melts for 5 minutes. Serve with some parmesan cheese on the side.
