Eggs & Puff Pastry featuring Za'atar

Growing up my mom always made 'Eggs in a Basket', eggs dropped into toast with a circle cut out. I still love this to this day but updated the recipe complete with a Middle Eastern flavors.

Ingredients

3 tablespoons Za'atar Seasoning
12 puff pastry shells, thawed
12 slices par-cooked pancetta
12 large eggs

Directions

1. Preheat oven to 400°F.
2. On a rimmed baking sheet lined with parchment paper or a silicone mat, arrange the 12 thawed shells 2 inches part. Bake for 8-10 minutes or until shells are just risen.
3. Remove the shells from oven and remove perforated center. Add 1 piece of pancetta in a cup fashion to hold the egg. Carefully add the egg and top each shell with 1/2 teaspoon Za'atar.
4. Return to oven and bake for 10 minutes or until egg white is set. Serve immediately.

Recipe Tip:
Par-cooked bacon can be used in place of the pancetta.
