Falafel with Za atar and Aleppo Pepper

I have moments where I could be vegetarian, maybe even vegan. When I created this famed middle eastern recipe, this was one of these moments. I have fafafel before but it was not memorable. These fritters are tender, flavorful, and hearty ok they were very memorbale. These make a fabulous pita sandwich or as an appetizer. 


2 tablespoons Za'atar Seasoning
2 teaspoons Aleppo Pepper
1/4 cup fresh mint
1/4 cup fresh parsley
2 - 15 ounce cans chick peas, drained and rinsed
2 tablespoons all-purpose flour
2 tablespoons olive oil
2 teaspoons salt
1/4 cup grated carrot

1. Pre-heat oven to 375°F. Line a rimmed baking sheet with parchment paper or aluminum foil sprayed with cooking spray. Set aside.
2. In the bowl of a food processor fitted with a metal blade, add the mint and parsley. Pulse until finely chopped. Add in the chick peas, flour, salt, and olive oil. Pulse for 20 seconds or until all ingredients are incorporated.
3. Transfer the mixture to a mixing bowl and stir in the carrots, Za'atar and Aleppo Pepper.
4. Roll the mixure into tablespoon size balls and arrange on the prepared pan. Bake for 12- 15 minutes. Make delectable pita sandwiches with your favorite tzatziki or serve as a an appetizer.
