Fire-Roasted Tomato Goat Cheese Tartlets

These tartlets are great anytime of the year and are made in mere minutes, yet taste as if you cooked for hours.

Ingredients

3 tablespoons Fire-Roasted Tomatoes
4oz goat cheese, room temperature
4oz cream cheese, room temperature
1 large egg, lightly beaten
1/2 teaspoon kosher salt
1/2 teaspoon pepper
30 prebaked phyllo or puff pastry shells

Directions

This is a easy and delicious recipe for cocktail party or brunch.
1. Preheat oven to 400°.
2. In a medium bowl, whisk together the eggs and Fire-Roasted Tomatoes.
3. Add the softened cheeses, salt and pepper and mix thoroughly.
4. Fill each pastry shell with a heaping teaspoon of cheese filling.
5. Place on a baking sheet and bake until puffed and golden on top, about 10-15 minutes.
