Garlic Scape Pesto featuring Anglesey Sea Salt

Ingredients

10 large garlic scapes
1/3 cup pistachios
1/3 cup parmesan cheese, finely grated
1/3 cup olive oil
1 pound cut spaghetti
Sea Salt to taste

Directions

1. In a bowl of a food processor, add the garlic scapes, pistachios, parmesan and ½ teaspoon Anglesey salt until finely chopped.
2. While the motor is still running slowly pour in the olive oil.
3. Cook the spaghetti according to the package, strain the past reserving 1 cup of the pasta cooking water.
4. Whisk together the pesto and the 1/2 cup of the reserved pasta water, adding more water as needed. Toss with the pasta.
5. Season with salt and pepper to taste.
