A simply amazing meal. This is perfect for a hot summer day. 


4 boneless chicken breasts (4 oz each)
1 tablespoon olive oil
1 head lettuce

1. Brush each chicken breast lightly with olive oil and rub each piece with Ginger Citrus seasoning.
2. Grill or sauté chicken until the internal temperature reaches 160º.
3. Slice the chicken breast and serve on bed of lettuce.

A simple dressing of 1 teaspoon citrus ginger, 3 teaspoons champagne vinegar, 1 teaspoon honey and 5 teaspoons olive oil makes the perfect dressing.
