Ginger Citrus Quinoa Salad

2 cups quinoa, cooked
1 red bell pepper, diced
1 apple, cored and diced
1/2 cup brussels sprouts, trimmed, shredded
1/2 cup pomegranate seeds
3 scallions, diced
2 tablespoons champagne vinegar
2 tablespoons juice- orange or grapefruit
1/2 teaspoon kosher salt
2 tablespoon extra virgin olive oil

1. In a large bowl combine the quinoa with red pepper, apple, brussels sprouts, pomegranate seeds and scallions.
2. In small mixing bowl combine the GInger Citrus Seasoning, vinegar, juice and salt. Whisk to combine. Slowly stream in olive oil to emulsify dressing. Pour over quinoa salad and toss to coat. Serve warm or cold.
