Granola featuring Apple Pie Spice

I have always made my own granola - but it took me years to perfect this recipe. It is not too sweet, it is filled with fruit and nuts and most importantly has crunchy clusters, my favorite. 

Ingredients

1 1/2 tablespoons Apple Pie Spice
3 cups steel cut oats (not quick cooking)
1 cup unsweetened coconut
1/4 cup wheat germ
1 1/2 cups nuts, chopped (I like a combination of walnuts, hazelnuts and whole almonds)
2 tablespoons canola oil
1/2 cup maple syrup or honey
1/2 teaspoon kosher salt
2 egg whites
1 1/2 cups dried fruit (I like a combination of cranberries, cherries, dates and figs)

Directions

1. Pre-heat oven to 300°. Line a rimmed cookie sheet with a silicone mat or parchment paper. Set aside.
2. In a large bowl combine, all the ingredients except for egg whites and dried fruit.
3. Whisk egg whites till frothy.
4. Add egg whites to oat mixture. Spread evenly on the prepared pan. Cook for 30 minutes.
5. Stir granola so all is toasted. Cook another 15 - 30 minutes or until golden brown and crisp.
6. Cool completely. Mix in dried fruits and store in an airtight container for 2 months.
