Greek Isles Crispy Fish Fillets

Ingredients

1 cup canola oil

2 eggs

4 teaspoons Mediterranean Seasoning

1 cup flour

1 teaspoon baking powder

Salt & pepper

1 ½ pounds haddock or cod fillets

Lemon wedges for garnish

Directions

1. Add the oil to a 12 inch cast iron or non-stick skillet over medium-high heat, about 350ºF.

2. In a shallow bowl add the eggs, and lightly beat.

3. In a second shallow bowl add the Mediterranean seasoning, flour, baking powder, salt and pepper to taste. Mix thoroughly.

4. Dredge the fillets into the egg mixture, and then into the flour mixture. Carefully place the fillets into the hot oil. Cook 5 to 7 minutes or until edges are golden brown.

6. Carefully flip the fillets and cook 3 to 4 minutes on the other side.

7. Remove the fillets to a paper-towel lined plate to collect the extra oil. Season with salt and pepper white the fish is still hot. Serve with lemon wedges.

Recipe Tip:
Tilapia, pollock, catfish, bass, trout, or perch are also great fish choices.
