Grilled Vegetables with Cracked Black Pepper Rub

Grilled vegetables are often overlooked as a delicious addition to a meal. This recipe could not get any easier and when served family style makes for a stunning presentation.


1/4 cup olive oil
2 teaspoons Dijon mustard
1 bunch asparagus, trimmed
1 pound cherry tomatoes
6 carrots, sliced lengthwise
1 yellow squash, cut into 1/2 inch slices
1 zucchini, cut into 1/2 inch slices
1 red onion, cut into wedges

1. In a large bowl, whisk together the olive oil, Dijon mustard and Cracked Black Pepper Rub.
2. Add in the prepared vegetables, tossing to coat.
3. Prepare grill to medium-high heat. Grill veggies turning occasionally until lightly charred, about 10-12 minutes.
