Home Fries with Cracked Black Pepper Rub

This makes a great side dish for any meal, but I especially like making it when I am having breakfast for dinner, scrambled eggs scrambled with asparagus and cheese. 

Ingredients

1 1/2 pounds potatoes, peeled and cut into 1 inch pieces
1 large onion, chopped
1 tablespoon olive oil

Directions

1. In a large pot add the potatoes, cover will cold water and bring to a soft boil. Cook for about 8-10 minutes until they are fork soft.
2. Drain the potatoes and set aside.
3. In a large cast iron or non-stick skillet over medium-high heat, add the olive oil and onion. Cook for 2 minutes.
4. Add in the potatoes and Cracked Black Pepper Rub. Cook on medium high stirring occasionally for 20 minutes or until potatoes are browned and crispy.

Recipe Tip:
I like using the really small potatoes for this (1” size) because you only need to cut them in half.
