Italian Rice and Spinach Pie

Similiar to a quiche, this is a simple custard with the addition of my Sicilian seasoning blend and chock full of rice, spinach and cheese.  

Ingredients

2 tablespoons Sicilian Seasoning
1 package (10 ounces) frozen spinach
2 cups cooked rice
¼ cup unsalted butter, melted
4 eggs, lightly beaten
1 cup parmesan cheese, grated
1 cup milk
1 small onion, diced

Directions

1. Preheat oven to 350°F. Light grease a 2 quart baking dish. Set aside.
2. Thaw spinach. Squeeze out excess water.
3. In a large bowl combine the spinach and remaining ingredients. Mix well and add to the prepared pan.
4. Bake for 40-50 minutes. Serve warm.

For any leftovers, wrap individual servings in plastic wrap and re-heat them (wrapped) in the microwave until warm.
