Jalapeño Corn Muffins

These corn muffins are spicy and sweet, a delicious complement to chili, bbq, or soup. The secret ingredient is a can of creamed corn. This adds sweetness, and ensures these are tender and moist. 





1 egg
1/3 cup milk
1 pkg. corn muffin mix (8.5oz)
1 - 8.5oz can creamy corn
1/2 cup cheddar cheese, grated
1/4 cup green onions, chopped

1. Preheat oven to 400°F. Grease a muffin pan or line with paper liners. Set aside.
2. In a large bowl whisk the egg and the milk. Add the corn muffin mix, creamy corn, cheese, green onions, and Jalapeño Pepper Flakes. Mix until just blended.
3. Spoon the batter mixture into the prepared pan.
4. Bake for 12-15 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
