1. In a skillet over medium heat, add the oil and onion. Cook until just browned, about 5 minutes. Transfer to a plate to cool.
2. In a large mixing bowl combine cooled onions, lamb, Dijon mustard, garlic, Dill, Mediterranean Oregano, Ground Coriander, Cumin, and salt and pepper to taste. Form into four 1.5 inch thick patties.
3. Prepare skillet to medium high or grill to medium-high heat. Grill burgers for 5 minutes on each side or until well browned. For medium cooked burgers, internal temperature should reach 160ºF.
4. Serve on toasted buns with your favorite tzatziki.
Quick pickled red onion- thinly sliced a red onion and place in a microwave-safe bowl. Add 2 cups water, 1 cup white vinegar, 1 tbsp both salt and granulated sugar. Microwave for 3 minutes, then cover with plastic wrap for 10 minutes. Drain and refrigerate for up to 3 days.
