Ingredients

2 cups kidney beans, drained and rinsed
2 cups garbanzo beans, drained and rinsed
2 cups green beans, blanched, cut into 1-inch pieces
1/2 red onion, finely chopped
1/2 large red bell pepper, diced
3 tablespoons extra virgin olive oil
3 tablespoons apple cider vinegar

Recipe Tip:
To blanch the green beans- drop into boiling water and cook for 2 minutes. Remove beans and place into an ice bath to stop the cooking process.
