1 package frozen puff pastry (17.3 ounces), thawed
6 roma tomatoes, sliced
1/2 cup kalamata olives, chopped
8 ounces feta cheese, crumbled or diced
2 tablespoons olive oil

1. Preheat oven to 400°F. Line a baking sheet with parchment paper or a silicone baking mat. Set aside.
2. Place the puff pastry sheets on a lightly floured surface. Cut the pastry into thirds lengthwise and widthwise to end up with 9 squares. Place on the prepared pan.
3. Pierce each pastry square all over with a fork.
4. Combine the olives, feta cheese, Mediterranean Seasoning and olive oil. Mix to combine.
5.Top each pastry square with one or two sliced tomatoes, followed by a tablespoon of olive-feta mixture.
6. Bake for 15 minutes or until pastry is puffed and golden brown. Serve warm or room temperature.
