One-Pot Pasta Puttanesca

The test kitchen has been working on one-pot meals for a while. This is one of the taste-tester favorites. In a mere 15 minutes you are rewarded with an incredible Italian meal that is hearty yet light enough to enjoy year round. 

Ingredients

2 tablespoons Sicilian
12 ounces pasta (linguini, spaghetti, fusilli or your favorite shape)
1 cup cherry tomatoes, chopped
1 cup olives, chopped
3 tablespoons capers, rinsed
1/4 cup parsley, chopped
2 tablespoons olive oil
1 teaspoon kosher salt
4 1/2 cups water
Parmesan cheese, optional

Directions

1. In a large pot combine all ingredients.
2. Bring to a boil and then simmer until pasta is al dente and most of the water is absorbed, about 10-12 minutes.
3. Serve warm with freshly grated parmesan cheese.
