Ingredients

1 lb pasta (we suggest penne or rigatoni)
1 tablespoon olive oil
1/2 onion, diced
1 cup pancetta, diced
1- 32oz can peeled plum tomatoes
1/2 cup vodka
1 cup heavy cream
1 cup parmesan cheese, grated
Salt and pepper to taste
1/4 cup fresh basil, chiffonade or torn into pieces

Directions

1. Bring 4-6 quarts of salted water to a boil. Add the penne pasta and cook to package directions for al-dente.
2. In a large saucepan, over medium heat add the olive oil, onion and pancetta. Cook until the pancetta fat cooks off and the onion becomes translucent, about 8 minutes. Do not let it burn.
3. Add the vodka and the can of plum tomatoes. Using either a potato masher or wooden spoon crush the tomatoes.
4. Stir in the Mediterranean seasoning, cook for 10 minutes over medium heat.
5. Stir in the heavy cream and cook for an additional 2-3 minutes, stirring occasionally. Add salt and pepper to taste.
6. Reduce heat to low and cook 5 minutes, uncovered.
7. Add in the pasta and Parmesan cheese and mix to coat the pasta with sauce. Garnish with basil. Serve warm.
