Pumpkin Pie

This traditional pumpkin pie is filled with aromatic spices like cinnamon, nutmeg, and ginger.  I decided to make a double batch and serve one pie and use the rest to make little pumpkin pie tarts.  It’s a good thing I doubled up; apparently this recipe is an office favorite.  Crust 1 stick cold unsalted butter 1 1/4 cups all-purpose flour* 2 to 4 tablespoons ice water Filling 15 oz. can solid-pack pumpkin (about 2 cups) 1 cup heavy cream 1/2 cup whole milk 2 large eggs 1/2 cup packed light brown sugar 1 tbsp. Victoria Taylor's Pie Spice 1/4 tsp. salt *Gluten Free Option- substitute your favorite gluten free flour and follow the directions on the package. For Crust: Blend flour, butter and salt in a food processor using on/off turns until mixture resembles coarse meal. Add 2 tbsp. ice water and process until moist clumps form, adding more water by teaspoonfuls if dough is dry. Gather into ball. Flatten to disk. Refrigerate for at least 1 hour prior to rolling. Roll out dough into a 14-inch round on a lightly floured surface and fit into a 9-inch glass pie plate. Crimp edge and prick bottom of pie crust all over. Chill 30 minutes. I rolled the extra dough out and cut it using the opening of a 3 inch round glass. The rounds were shaped by hand and placed into a lightly greased muffin tin. Position rack in middle of oven and preheat to 375°. Bake crust in the middle of the oven for 20-25 minutes or until pale golden. Cool in pan on a rack.  If you are making the pie tart shells cut baking time to 15-20 minutes. For Filling: Whisk together pumpkin, cream, milk, eggs, brown sugar, Pie Spices and salt, then pour into shell. Bake pie in the middle of the oven for 45-50 minutes, or until filling is set but center still trembles slightly. (Filling will continue to set as pie cools). Transfer to a rack and cool completely. Optionally you can cut out leaf or acorn designs on leftover pie crust and add them to the pie with 20 minutes left to bake. Serving Suggestions: Serve with vanilla ice cream or slightly sweetened whipped cream if desired.  Perfume with a sprinkle of extra Pie Spices. Best, Victoria
