Roasted Garlic featuring Trapani Sea Salt

Roasting garlic with olive oil and Trapani Sea Salt mellows the astringent and pungent notes revealing a deep and complex yet gentle sweet flavor. Roasted garlic is the secret ingredient of many chefs and home cooks for savory dishes, sauces, and condiments. I personally adore roasted garlic smeared on warm crusty bread, there is simply nothing better.


4 tablespoons Trapani Sea Salt
4 whole garlic heads
4 tablespoons extra virgin olive oil

1. Preheat oven to 400°F.
2. Cut the tops off the garlic head so the cloves are exposed.
3. Cut 4 pieces of aluminum about 8 inches long. Place a head of garlic in the middle, wrap up edges without crimping, drizzle with olive oil and Trapani Sea Salt. Crimp edges to create a purse or packet.
4. Roast for 45 minutes. Let cool for 5-10 minutes. Squeeze out the caramelized cloves.
