Sautéed Beet Greens featuring Red Pepper Flakes

At the market I always buy beets with their leafy green tops and sauté them up as you would spinach for a delicious side dish. 

Ingredients

1 tablespoon Red Pepper Flakes
3 tablespoons olive oil
2 garlic cloves, minced
2 pounds beet greens
Kosher salt

Directions

1. In a large saute pan over high heat, add the olive oil, garlic, and Red Pepper Flakes. Cook until fragrant, about 30 seconds.
2. In batches add the beet greens, stirring to wilt. Season to taste with salt. Serve warm.
