2. Cut the peppers into lengthwise strips. removing the stems, seeds and pith. You may add other vegetables to this recipe -try zucchini, summer squash and thickly sliced onions.
3. In a large zip top bag combine the peppers, Sicilian, and olive oil. Shake to completely coat.
4. Place skin side down on medium hot grill, until skin blisters and peppers soften, 4-8 minutes. You can let the skin brown a bit if desired. Turn peppers and grill until inner side is soft, 2 to 4 minutes.
Not grilling weather? Place these on a cookie sheet and oven broil. Follow steps 2-4 in the recipe.
