Slow Roasted Sicilian Tomatoes

Sicilian is my absolute favorite seasoning blend. Added to tomatoes and slow roasted, these are simply irresistible. 

Ingredients

2 tablespoons Sicilian Seasoning
2 pounds roma tomatoes, seeded and sliced in half
2 tablespoons olive oil
Salt and Pepper to taste

Directions

1. Preheat oven to 350°F.
2. Place the tomatoes cut side up on a sheet pan lined with parchment paper. Generously drizzle the tomatoes with olive oil, sprinkle with Sicilian seasoning, salt and pepper.
3. Bake for 1.5-2 hours depending on how crispy you would like them.

Just made these for Easter! Used baby Roma tomatoes so they are bite sized and cooked a little faster. Great side dish!

Recipe Tip:
You can certainly use any other tomato you like – cherry, grape, etc. I like using Roma tomatoes because they are so easy to seed and have a great meatiness that works well in this recipe.
