Smoky Brined Roasted Pork Tenderloin

Ingredients

1 cup (1/2 jar) Smoky Brining Blend
1-2 pork tenderloins (2-4 pounds)
2 cups boiling water
3 cups ice cubes
4 cups cold water (to bring total mixture to 8 cups)
3 tablespoons olive oil

Directions

1. In a large non-reactive container, combine the Smoky Brining Blend with boiling water. Stir to dissolve salt and infuse water with flavor. Add the ice cubes; stir to cool mixture.
2. Rinse the pork under cold water and place into the brine. Add cold water to completely cover the pork (brine should total 1 gallon).
3. Place in refrigerator to brine for 4-12 hours.
4. Preheat the oven to 325°
5. Remove pork from liquid and pat dry. (Do not rinse!)
6. Coat tenderloins with oil, and place the tenderloins on a rack in a roasting pan.
7. Roast uncovered for 30-45 minutes or until the internal temperature reaches 145°. Be sure to check the internal temperature at ¾ cooking time as brined meat cooks faster than un brined meat.
8. Remove from oven and let rest for 5-10 minutes before cutting into ½ inch slices.
