Smoky Santa Fe Chicken

Healthy comfort food isn't an everyday phrase. This dish is exactly that, healhty, comforting, easy to make and delicious. 

Ingredients

4 tablespoons, divided Smoky Paprika Chipotle
2 tablespoons olive oil
1 1/2 pounds chicken breast, 1 inch cubes
4 cups cooked rice
1 can (14.5 oz.) diced tomatoes
1 can (15.5 oz.) black beans, drained and rinsed
1 cup corn kernels
1 cup shredded cheese
green onion (optional garnish)

Directions

1. In a large skillet over medium-high heat add the oil, chicken and 3 tablespoons of Smoky Paprika Chipotle Seasoning. Sauté for 5-7 minutes, stirring occasionally, until chicken is cooked or reaches an internal temperature of 160º
2. Add in the rice, tomatoes, black beans, corn and remaining 1 tablespoon Smoky Paprika Chipotle. Cook for 2-4 minutes until heated through, stirring occasionally.
3. Top with cheese and cover the pan for 1 minute.
4. Garnish with chopped green onions.
