Spicy Smoky Paprika Chipotle Chickpeas

1 -15 ounce can chickpeas (garbanzo beans), drained and rinsed
1 tablespoon olive oil

Directions

1. Rinse and drain chickpeas. Spread out in a single layer on a paper towel. Let dry for one hour.
2. Preheat oven to 400°F. Line a rimmed baking sheet with parchment paper. Arrange the chickpeas on the prepared pan.
3. Bake in the middle of the oven 30 minutes, stirring and rotating every 10 minutes. Taste a chickpea or two. If they are crunchy, they’re done. If not, bake for another 10 minutes.
4. Place the hot chickpeas in a bowl with the olive oil and Smoky Paprika Chipotle. Toss to coat.
