Summer Salsa

This refreshing salsa can be made in minutes with the help of my Fire Roasted Onions, Jalapeno and Red Pepper Flakes.  Perfect for a hot summer day! For this recipe you will need:

Put 5 of the tomatoes into a food processor with ¾ of the pepper, ½ the cilantro and lime juice.  Pulse until chunks are a good size dice, approximately 1/8 inch. Pour the mixture into a bowl.  Add the salt, Fire Roasted Onions, Jalapeno and Red Pepper Flakes.  Roughly chop the remaining pepper, tomato and cilantro then mix into the bowl. Scoop up with your favorite chips; mix with chopped avocados or top tacos and burritos.   Best, Victoria
