2 large onions, chopped
2 1/2 pounds ground beef
1 large green bell pepper, 1/4 inch dice
1 packet of Victoria Taylor’s Texas Chili Seasoning or 1/4 cup of Texas Red Seasoning
1 1/2 teaspoons salt
1 large can (28 oz) crushed tomatoes
1 large can (28 oz) diced tomatoes
1 cup water
2 cans (15 oz) kidney beans, drained
Toppings: tortilla chips, sour cream, grated cheese, chopped scallions or red onion.
Sauté the onions and the ground beef in a large pot over medium-high heat for 10 minutes or until the ground beef is just cooked. Stir in the salt and the Texas Chili Seasoning.
Add the green pepper, canned tomatoes, and water. Cook covered on a low boil for 30 minutes, stirring occasionally.
Add the beans and simmer, uncovered for an additional 15 minutes.
Serve with your favorite toppings.
