Tomatoes Provençal

I love the flavor of roasted tomatoes. Add in herbs, lavender, garlic and lemon, this dish is simply irresistible. It makes a great addition to breakfast, lunch or dinner. 

Ingredients

6 ripe tomatoes, about 3 inches in diameter
1 1/2 cups bread crumbs, preferably freshly cut
2 shallots, minced
1/4 cup basil, roughly chopped
2 garlic cloves, minced
1 1/2 teaspoons kosher salt, divided
1 1/2 teaspoons black pepper, divided
1/2 cup parmesan cheese, grated
2 tablespoons olive oil

Directions

1. Preheat oven to 400°F.
2. Cut the cores from the tomatoes, removing as little as possible. Cut them in half crosswise and, with your fingers, remove the seeds and juice. Place the tomato halves in a baking 9x9 dish. Season the tomatoes with 1 teaspoon each salt and pepper.
3. In a bowl, combine the bread crumbs, shallots, basil, garlic, the remaining 1/2 teaspoon salt and the Herbes de Provence.
4. Fill the tomatoes with the bread crumb mixture. Bake the tomatoes for 15 minutes, or until they're tender.
5. Sprinkle with cheese, drizzle with olive oil, and bake for 2 additional minutes. Serve hot or at room temperature.
