Traditional Meatballs

These traditional style meatballs can be enjoyed many different ways.  They are delicious as appetizers all by themselves or served over spaghetti with red sauce or in a meatball sandwich. For this recipe you will need:

This recipe makes 4 dozen 1½ inch meatballs Combine all the ingredients in a large bowl until just mixed together.  You do not want to over handle this mixture. Using your hands or an ice cream scoop gently form the meat mixture into 1 ½ inch balls. Place meatballs on a cast iron or other heavy bottomed skillet preheated on medium low making sure not to crowd the pan and cooking in batches if necessary.  Cook the meatballs until they are browned on all sides. I often use half of the meatballs immediately and freeze the other half for later use.  To freeze them you will want to spread the meatballs on a cookie sheet and place it in the freezer for 30 minutes.  Remove the partially frozen meatballs from the freezer and place in a freezer or vacuum seal bag.  Return to the freezer.
