Tuscan One Pan Farro

There are two great things about this recipe (besides the fact that it tastes like it is bad for you while being good for you). It is truly a one pan meal – so easy to make and to clean up. The other is that you can easily change the taste of this dish by changing the blend: Sicilian, Mediterranean, Herbes de Provence, Pizza, or No Salt Lemon Pepper would all work great in this dish.

Ingredients

2 tablespoons Tuscan
1 cup semi-pearled or whole farro
2 cups water
1/2 large onion, chopped
2 garlic cloves, chopped
12 ounces grape or cherry tomatoes, halved
1 tablespoon olive oil
salt to taste
1/2 cup basil, julienned
1 cup parmesan cheese, grated

Directions

1. Add farro and water to a medium saucepan.
2. Let the farro soak while you slice the tomatoes, onion, and garlic adding them directly to the pan when done.
3. Add the Tuscan, salt, and olive oil to the pan.
4. Bring the pot to a boil, then simmer uncovered for 30 minutes, stirring occasionally. Top with basil and parmesan. Serve warm.
