White Fish Fillets with Herbes de Provence Bread Crumbs

A classic New England dinner fish dinner, crunchy, flavorful and perfect anytime of the year. 

Ingredients

1 to 1 1/2 pounds white fish fillets (such as cod, sole, haddock)
1/2 cup fine dry bread crumbs
2 tablespoons unsalted butter
lemon wedges

Directions

1. In a shallow bowl combine bread crumbs and Herbes de Provence.
2. Dredge each fillet with bread crumb mixture.
3. In a large skillet over medium-high heat add 1/2 of the butter. Saute half the fillets for about 3 minutes per side until golden brown.
4. Using remaining butter, cook the remaining fish fillets.
5. Sprinkle with lemon just before serving.

Recipe Tip:
Serve this dish on a large plate with a lemon wedge garnish. White fish works well with almost any seasonal vegetable and rice or baked or roasted potatoes.
