Ginger Citrus Lettuce Wraps

There isn't a better way to enjoy the bounty of summer vegetables in their purest form- this recipe is simply delicious and always a crowd pleaser. 

Ingredients

1/4 cup vegetable oil
3 tablespoons rice vinegar
3 tablespoons soy sauce (we prefer reduced-sodium)
2 teaspoons granulated sugar
2 tablespoons peanuts, chopped (optional)
2 medium carrots, peeled and cut into julienne strips
1 medium red bell pepper, cut into julienne strips
1 small cucumber, thinly sliced
8 radishes, thinly sliced
1/2 cup scallions, thinly sliced
1 head Boston lettuce leaves, rinsed and patted dry

Directions

1. For the dressing, combine the vinegar, soy sauce, Ginger Citrus and sugar in small bowl. Whisk in the oil. Add peanuts if desired, set aside.
2. Place the carrots, bell pepper, cucumber, radishes and scallions into small serving bowls or on a platter to serve family style.
3. To assemble, top each lettuce leaf with salad ingredients; drizzle with dressing and roll up.
