New England Lobster Roll featuring Zesty Lemon Herb

After traveling all over New England in pursuit of the perfect lobster roll, our intern Megan decided to create one of her own. With all the mouthwatering elements of a classic New England lobstah roll, featuring a zesty VG twist, Megan's take on this summer staple is the perfect addition to any summer event.



1 teaspoon Zesty Lemon Herb
3 lbs lobster meat (roughly 6 chicken lobsters)
Juice of 1/2 lemon
1/3 cup mayonnaise
7 tablespoons unsalted butter, melted, divided
1/4 cup celery leaves, roughly chopped
1/4 cup scallions, chopped
4 brioche buns

1. In a small bowl whisk the mayonnaise, 4 tablespoons of melted butter, celery, scallions, lemon juice and the Zesty Lemon Herb seasoning.
2. Add the lobster meat to the bowl and toss to coat. At this point you can chill for 3-4 hours before serving.
3. Heat a grill pan or skillet to medium heat. Brush the inside of the buns with the remaining melted butter. Toast until golden.
4. Divide the lobster salad among the buns and enjoy!
